Processing with control and transparency

We keep processing simple and traceable. Cherries are separated by village, variety and altitude when possible, and each lot follows a documented protocol so you can understand what you are cupping.

Clean and classic
Fully washed lots focus on clarity and structure: careful depulping, controlled fermentation, thorough washing, and even drying on patios or raised beds.
Honey
Balanced sweetness
Our honey coffees keep a measured amount of mucilage on the parchment, aiming for sweetness and complexity without losing cleanliness in the cup.
Natural
Fruit-forward
Naturals are slow-dried in cherry at controlled thickness and with frequent turning, seeking vibrant fruit and stable storage without over-fermentation.
